Workshop Objectives

Prominent food scares and changes in the international trading environment have brought food safety to the forefront of international agri-food policy concerns. Recent trends include an increased emphasis on food safety regulations in trade, a tightening of standards, a reorientation of private sector quality assurance techniques towards preventive management, and a corresponding shift by regulatory agencies toward process-based standards, including "mandatory HACCP." How are developing countries coping with these changes? What kinds of collaborative research and development cooperation can best support these countries in the management of food safety for local and export markets? These themes are addressed in this collection of papers from an international workshop of food safety experts held in Montpellier,France, in December 2000.

Workshop Proceedings

This proceedings contains an introductory overview article and the full set of papers presented at the workshop, divided into two sections: current issues in food safety management (9 articles) and case studies of food safety management experiences in different types of supply chains (15 articles). The English language edition contains full-length versions of all articles. In the French language edition, some of the articles are available in abridged form only (indicated by an asterisk (*) in the French menu).
